Queso Payoyo Curado en Manteca is an artisanal Spanish cheese made in the Sierra de Grazalema (Cádiz), crafted from high-quality Payoyo goat’s milk.

After maturing for several months, the cheese is coated and cured in butter, which enhances its creaminess and intensifies its aroma.

This curing process gives the cheese a rich, smooth texture with a balanced flavour—deep, slightly sharp, and buttery, with the characteristic notes of Payoyo milk. The rind absorbs the butter, resulting in a luxurious mouthfeel and a lingering, savoury finish.
